Course content:

Michel Paquot : Glucides. Principal sugars. Chemical reactivity and physical properties. Structure and conformation. Polysaccharides (starch, inulin, cellulose, hemicellulose,…). Fibers (wood fibers, dietary fibers). Application field of lipids. Structure and properties of fatty acids. Glycerides. Components of unsaponifiable. Physico-chemical properties of lipids. Application fields. Bernard Wathelet : Amino acids, peptides and proteins. Structure and principal properties. Exemple of protein structures (alpha-keratin, fibroïn, collagen, elastin). Protein denaturation mechanism and practical importance. Amino acids, peptides and proteins : Analysis, sequence, conformation, peptide synthesis, interactions, modifications, purification. Structure activitiy of proteins. Biomolecules analysis and purification methods. Precipitation, Partition, Ion exchange, Chromatography, Electrophoresis.
